When it comes to cocktails, is there one standout drink that you’ve seen become an instant hit at an event?
Absolutely! One cocktail that became an instant sensation was a Smoked Old Fashioned served at a black-tie gala. The bartender presented each drink under a glass cloche filled with hickory smoke, releasing an aromatic cloud as it was lifted in front of the guest. The experience was as much of a performance as it was a drink, sparking conversation and creating a moment guests talked about all night.
What about desserts? What’s the most unforgettable sweet creation you’ve seen served?
One dessert that truly stands out was at a luxury wedding where the pastry chef took the 8-tiered wedding cake that was on display and created tiny miniature replicas as they served dessert for each guest.
Presentation is everything. Is there a particular way food has been served at an event that left a lasting impression?
One of the most visually stunning presentations was a “floating” appetizer display at a modern art-inspired gala. Instead of traditional trays, small bit-sized hors d’oeuvres were suspended from thin, clear acrylic strings at various heights, giving the illusion that they were floating in mid-air. Guests could simply pluck a canapé from the installation, making it an interaction and artistic culinary experience.
